This is one of those dishes we have at every family gathering. I love it! Ingredients:- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup melted butter
Combine. Pour into a buttered 1 1/2 to 2-quart casserole dish or 9"x9" pan. - 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted butter
- 1 cup chopped pecans
Mix ingredients together and sprinkle over top of sweet potatoes. Bake at 350° for 30 to 40 minutes, until hot and browned. Serves 6 to 8.

Yeah, I'm double posting, but I just love potatoes sooooo much! We call these Winnie's potatoes because it is my grandma's recipe. She calls them escalloped potatoes but that brings up images of sliced potatoes in cheesy sauce for me, so we have rechristened them after her, Winifred "Winnie" Mawhorr. Ingredients:- 1 2-lb bag frozen hash brown potatoes, partially thawed
- 1 8-oz. package shredded cheddar cheese
- ½ pint sour cream
- ½ tsp. garlic powder (or garlic salt)
- ½ tsp. salt
- ¼ c. melted margarine
- ½ c. finely chopped onion
- 2 cans cream of chicken soup
Combine all ingredients in mixing bowl. Pour into a 9x13x2 pan or dish and top with: 1 c. crushed corn flakes or Town House Crackers mixed with ½ c. melted margarine (I always use the crackers). Bake at 350* for 1 hour and 15 min.
